So, what happens when a Chardonnay ages, if stored correctly?
The fruit flavours and aromas will diminish over time.
In Australia, the vast majority of Chardonnay will benefit from some short term cellaring but are best drunk before they are 5 years old if the grapes are grown in cooler conditions the wine will last longer.
This chardonnay is now 3 years old and you still taste the fruit and vanilla flavours, but more mellow.
It is getting close to its optimum condition, it has nicely ‘filled out’ and all flavours have had time to integrate.
